Burgers - Blue Cheese Butter Burgers

4 tablespoons unsalted butter, at room temperature
1/2 cup crumbled blue cheese, at room temperature
1/2 teaspoon Dijon mustard, plus more for topping
1 tablespoon finely chopped chives
Kosher salt and freshly ground pepper
1 1/2 pounds ground beef
1 tablespoon Worcestershire sauce
2 tablespoons vegetable oil
4 hamburger buns, toasted if desired
Sliced red onion and arugula, for topping
Combine the butter, blue cheese, mustard and chives in a medium bowl. Season with salt and pepper and beat with a rubber spatula or mixer until smooth and combined. Transfer the blue cheese butter to a sheet of parchment paper or plastic wrap, then roll up into a log, about 1 1/2 inches wide and 3 inches long. Refrigerate until firm, at least 1 hour.
Combine the ground beef, Worcestershire sauce, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a medium bowl. Mix with your hands until evenly combined. Divide into 8 equal portions, then flatten into thin patties, about 4 inches wide. Slice the blue cheese butter into 4 thick rounds. Center a butter round on 4 of the patties, then top with the remaining patties and press and pinch the edges together to seal. Shape each into an even 4-inch-wide, 1-inch-thick patty.
Heat the vegetable oil in a large skillet over medium heat or preheat a grill to medium and oil the grates. Add the patties; cook until browned on one side, about 4 minutes. Carefully flip and cook until browned on the second side, 3 to 5 more minutes for medium-rare to medium. Transfer to a rack set on a baking sheet or to a paper towel–lined plate.
Put the patties on the buns. Top with red onion, arugula and mustard.
