Winter Comfort Food - Creamy Sausage and Potato Soup

1 lb Stittsworth sausage (spicy or mild)
4 large russet potatoes, peeled and diced
1 onion, chopped
2 carrots, diced
3 cups chicken broth
1 cup heavy cream
1 cup milk
2 tbsp butter
1/2 tsp smoked paprika
Salt and pepper to taste
Optional garnish: shredded cheddar and chopped chives

In a large pot, brown sausage over medium heat. Remove and set aside, leaving rendered fat in the pot.

Add butter, onions, and carrots. Sauté for 5-6 minutes until softened.

Add potatoes, chicken broth, smoked paprika, and a pinch of salt. Bring to a boil, then reduce heat and simmer for 20 minutes until potatoes are tender.

Mash some of the potatoes in the pot to thicken the soup slightly. Stir in cream, milk, and cooked sausage. Simmer for 10 more minutes. Serve with cheddar and chives.
