Winter Comfort Food - Hearty Beef Stew

2 lbs Stittsworth beef chuck, cut into 1.5-inch cubes
3 large carrots, peeled and sliced into chunks
2 large potatoes, peeled and cubed
2 celery stalks, diced
1 onion, chopped
3 cloves garlic, minced
2 tbsp tomato paste
1/2 cup red wine (optional)
4 cups beef broth
1 tbsp Worcestershire sauce
2 tsp fresh thyme leaves (or 1 tsp dried)
1 bay leaf
2 tbsp flour
2 tbsp olive oil
Salt and pepper to taste
Heat oil in a large Dutch oven over medium-high heat. Season beef with salt and pepper. Brown in batches to develop a crust, then set aside.
Lower heat to medium. Add onions, carrots, celery, and garlic. Sauté for 5-7 minutes until softened. Stir in tomato paste and cook for 2 minutes.
Sprinkle flour over the vegetables and stir well. Deglaze the pot with red wine (if using). Add beef broth, Worcestershire sauce, thyme, and bay leaf. Stir.
Return beef to the pot and bring to a simmer. Cover and cook on low heat for 1.5 hours. Add potatoes and cook an additional 30-40 minutes until tender. Adjust seasoning and serve hot.
