Winter Comfort Food - Meatloaf Muffins

1 lb ground beef (or a mix of beef and pork)
1/2 cup breadcrumbs
1 egg, beaten
1/4 cup milk
1 small onion, finely diced
1/4 cup ketchup (plus extra for topping)
2 tsp Worcestershire sauce
1 tsp garlic powder
1 tsp smoked paprika
1 tsp dried parsley
1/2 tsp salt
1/2 tsp black pepper
Optional: shredded cheddar cheese for stuffing

Preheat the oven to 375°F and grease a 12-cup muffin tin. In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, ketchup, mWorcestershire sauce, garlic powder, paprika, parsley, salt, and pepper. Mix gently to combine without overworking the meat.

Divide the mixture evenly into the muffin tin. For cheesy centers, press a small amount of shredded cheese into the middle of each portion and cover with meat. Top each “muffin” with a dollop of ketchup or BBQ sauce.

Bake for 25-30 minutes or until the internal temperature reaches 160°F. Let rest for 5 minutes before serving.
