Peanut Butter Glazed Ribs

2 lbs pork ribs
1/2 cup peanut butter (smooth or chunky)
1/4 cup soy sauce
2 tbsp honey
2 tbsp rice vinegar
1 tbsp sriracha or chili paste (optional)
1 tsp garlic powder
1 tsp smoked paprika

Preheat oven to 300°F.

Season ribs with salt, pepper, and smoked paprika. Wrap in foil and bake for 2.5 hours until tender.

In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sriracha, and garlic powder.

Remove ribs from foil and brush generously with the glaze.

Increase oven temperature to 425°F or place ribs under a broiler for 5-7 minutes, until the glaze caramelizes.

Serve with lime wedges and a side of coleslaw or steamed greens.
