African Peanut Stew with Beef

1 lb beef chuck, cubed
2 tbsp vegetable oil
1 onion, diced
2 cloves garlic, minced
2 tbsp tomato paste
1 cup peanut butter
4 cups beef broth
1 sweet potato, cubed
1/2 tsp cayenne pepper
1 cup spinach
Heat oil in a large pot. Brown beef and set aside.
Sauté onion and garlic until softened. Stir in tomato paste and cook for 1 minute.
Add peanut butter, beef broth, and cayenne. Mix until smooth.
Return beef to the pot, add sweet potato, and simmer until beef is tender, about 45 minutes.
Stir in spinach just before serving.
