Venison - Country-Style Venison Sausage Gravy

    1 pound ground venison breakfast sausage
    2 Tbsp. unsalted butter
    2 Tbsp. flour
    2 cups whole milk
    cracked black pepper
    salt to taste

In a large skillet, add the ground venison breakfast sausage and cook over medium heat until fully cooked through.
    
While the sausage is cooking, melt the butter in a microwave-safe bowl or measuring cup. Add in the flour and stir to make a roux.
    
Once the sausage has fully cooked, add in the roux and stir to combine.
    
Slowly add in the milk, stirring constantly. Reduce heat to medium-low and cook until thickened, stirring frequently.
    
Season with salt and pepper to taste and serve immediately.
