Minnesota Hot Dish - Shepherds Pie

1 (16 ounce) package frozen Tater Tots
4 tablespoons butter
1 cup slicedd onion
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 package portabella mushrooms, sliced
1 package dried mixed mushrooms, rehydrated
2 pounds cubed, browned, tri tip
2 teaspoons Worcestershire sauce
1 (8 ounce) package shredded sharp Cheddar cheese
AP flour
beef stock

Preheat the oven to 300 degrees F.  Cube and brown the beef, and remove to a plate.  Cook the sliced onions, and add the re-hydrated mushrooms and the sliced muchrooms to the pan.  Cook until well browned.  Add the butter and the flour and stir to incorporate.  Once thickened, add the beef stock (add as much stock as you want gravy).  Cook until thick.  Add the meat, sliced portabella, and the gravy mixture into a glass baking dish, and bake (covered) for 30 minutes.

Remove from the oven, and remove the lid.  If you have a lot of liquid in the baking dish, remove some with a large spoon and set aside.  Add the cheese and the tots, and bake at 425 for 30 minutes.  Remove from the oven and let rest for 10 minutes.  You can drizzle the reserved stock over the top if you want the stock flavor into the tots.
