If you smoke baby back or St. Louis ribs and vacuum seal them how long will they keep safely in the refrigerator? If you freeze the vacuum sealed ribs, what's the maximum length of time you can keep them before the quality degrades?
Smoked ribs that are vacuum sealed and refrigerated should be kept no more than three or four days in the fridge. Those same ribs, when frozen, should remain in good shape for up to six months.
To reheat, from frozen, place the vacumn bag on a large pan (like a lasagna pan) covered in water until thawed. The ribs will thaw in about a half an hour. Open the vacumn bag, and place on a cookie sheet. Place in the oven at 250 degrees until warmed through.
