Go Big or Go Home Grilling - Brisket Stuffed Burger
1 pound of ground beef (85% lean)
chopped leftover brisket
sliced jallepeno peppers
shredded cheese
cooked bacon
more cheese...this time sliced
Using a burger stuffer (Don't have one? You should!), place 2/3 of a pound of beef in the bottom of the stuffer. Using the stuffer topper, create the hole for the stuffing. Add some chopped brisket, some jallepeno slices and some shredded cheese. Form to top of the burger, and form it around the bottom of the burger. Place in the fridge for a half an hour. Light your grill to high, indirect, heat. Onc the coals are ready, grill on each side over the coals for 5 minutes. Then, move to the indeirct cooking side of the grill, and cover for 20 minutes.
Place 1 or 2 strips of bacon on the burger and top with some slice cheese. Put the lid back on teh grill until the cheese is melted. Let rest for 5 minutes before eating. Top with condiments of your choice.
Note...this makes ONE...really BIG...burger!
