Fresh Strawberry And Grilled Onion Salsa
1 small Sweet Onion
1 tablespoon Extra Virgin Olive Oil
1/3 cup Fresh Strawberries, stemmed and chopped
1/2 teaspoon Coriander Seeds
1/2 teaspoon Cumin Seeds
1 teaspoon chopped Fresh Oregano
2 teaspoons Sherry Vinegar
Coarse Salt
Fresh Ground Black Pepper
Slice medium white onion into 1/4 inch rings. Drizzle onion with olive oil.
Place on hot grill and cook until onion softens and browns.
Finely chop 1/4 cup onion.
Combine onion, fresh strawberries, coriander, cumin, oregano, and sherry vinegar in a small serving bowl.
Season with salt and pepper.
