Short Smoke - Wings

Baby Blues Dry Rub:
1 cup brown sugar
3 tablespoons paprika
3 tablespoons garlic powder
3 tablespoons onion powder
3 tablespoons celery salt
3 tablespoons seasoning salt
3 tablespoons barbecue seasoning
2 tablespoons chili powder
1 tablespoon cayenne pepper
1 tablespoon ground white pepper
2 teaspoons dry mustard
1 pound jumbo wings
Baby Blues Sweet BBQ Sauce:
4 ounces pureed cayenne peppers
1 cup ketchup
1 cup molasses
1/4 cup lemon juice
1/4 cup vinegar
2 tablespoons tamari
2 tablespoons yellow chile vinegar
2 tablespoons Worcestershire sauce
1 tablespoon ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon ground white pepper
Baby Blues XXX Sauce:
8 ounces pureed cayenne pepper
4 ounces pureed grilled habaneros
8 ounces pureed serranos
1 quart vinegar
1/2 cup pineapple puree
1/2 cup pureed chipotle peppers in adobo sauce
1/4 cup minced garlic
1/4 cup mango puree
1/4 cup raspberry puree
2 tablespoons pasilla puree
1 tablespoon molasses
1 tablespoon Worcestershire sauce
1/2 drops hot sauce, preferably Pure Cap, mixed and strained
For the dry rub: Combine the brown sugar, paprika, garlic powder, onion powder, celery salt, seasoning salt, barbecue seasoning, chili powder, cayenne, white pepper and dry mustard in a bowl. Apply to the wings.
For the wings: Place the wings in a smoker and smoke for 45 minutes at 220 degrees F.
For the sweet BBQ sauce: Combine the cayenne peppers, ketchup, molasses, lemon juice, vinegar, tamari, yellow chile vinegar, Worcestershire sauce, black pepper, garlic powder, onion powder and white pepper in a bowl.
For the XXX sauce: Combine the pureed cayenne, habaneros, serranos, vinegar, pineapple juice, chipotle peppers, garlic, mango puree, raspberry puree, pasillas, molasses, Worcestershire sauce and hot sauce in a bowl.
Grill the smoked wings, then toss in the sauces.
