Cheap Meats - Stittsworth Steak

This eight-inch strip from the cow's shoulder is perfect for the filet-mignon lover in your life.  It's lean and tender. Plus, it's much, much cheaper than the marquee cut it matches. Treat it the way you would a tenderloin: Slice it into single-serving medallions, or sear and roast it whole.

Olive Oil
Montreal Steak Seasoning
1 Stittsworth Steak

Preheat your oven to 450.

Get a cast iron skillet as hot as you can.  Place olive oil into the hot pan and place the steak in the pan.  DO NOT SEASON the steak will burn.  Cook 4 minutes per side (there are three sides on this cut).  Take off the heat, and drizzle with more olive oil.  Season the steak and place in the hot over for 5 minutes.

Let the steak rest for five minutes before carving.
