Cheap Meats - Stittsworth Steak
This eight-inch strip from the cow's shoulder is perfect for the filet-mignon lover in your life. It's lean and tender. Plus, it's much, much cheaper than the marquee cut it matches. Treat it the way you would a tenderloin: Slice it into single-serving medallions, or sear and roast it whole.
Olive Oil
Montreal Steak Seasoning
1 Stittsworth Steak
Preheat your oven to 450.
Get a cast iron skillet as hot as you can. Place olive oil into the hot pan and place the steak in the pan. DO NOT SEASON the steak yet...it will burn. Cook 4 minutes per side (there are three sides on this cut). Take off the heat, and drizzle with more olive oil. Season the steak and place in the hot over for 5 minutes.
Let the steak rest for five minutes before carving.
