Pork Tenderloin Tacos
1 pork tenderloin (about 2 pounds)
2 large yellow onions, sliced
3 tbs of minced jalapeno
2 cups chicken stock
2 limes
shredded pepper jack cheese
Slice the pork into bite sized pieces. Brown on all sides in a bit of olive oil in a skillet. Add the onions and chicken stock and simmer over low heat until the onion is cooked and the pork is cooked through. Add the jalapeno. Serve on tortilla with a squeeze of lime and cheese.
