Pork Tacos with Lime and Jalapeno

1 pork tenderloin, cut into bite sized pieces
1 large sweet onion, sliced
1 minced Jalapeno
Juice of 3 Limes
1 can low sodium chicken stock

Saute the pork in olive oil.  When the pork is nearly cooked through, add the sliced onion, jalapeno and chicken stock.  Simmer for 10 minutes, or until the pork is cooked through.  Squeeze the lime juice over the pork.  Place the pork and onions mixture into warmed flour tortillas.  Top with extra lime juice as desired.
